Kajian Usaha dan Penerimaan Masyarakat terhadap Bakso Namule (Nangka Muda dan Lele)

Meatballs are one of the main course or main dishes. Meatball is one of the many Indonesian foods, with a round shape. Selection of young jackfruit and catfish in the manufacture of meatballs namule people with high cholesterol can enjoy meatballs safely and healthier, and reduce dependence on expensive beef. The aims of this research are: 1) Knowing the formula and characteristics of Bakso with substitute ingredients for young jackfruit and catfish 2) Knowing how the people's acceptance of Bakso Namule products is. 3) Make a business study for namule meatballs. The methods used in this study include library, documentation, experimental, hedonic, and nutritional methods. The resulting data is then processed and evaluated and then presented in the form of tables or diagrams with in-depth explanations. The results showed that the Bakso Namule formula was the best and was accepted by the community with the composition of 300 g of young jackfruit, 300 g of local catfish, 150 g of tapioca flour, 20 g of fried shallots, 20 g of fried garlic, 75 g of egg white and 10 g of pepper powder. g. The product has sensory characteristics, namely a savory taste combined with a distinctive taste of catfish meat, gray in color, soft and chewy texture, the aroma of catfish and fried onions. One recipe with a yield of 880 g (58 seeds) Bakso Namule is priced at IDR 35,000, so the price per seed is IDR 600.
