At this time coffee is growing rapidly to become the most popular drink among the people. The increasing interest has made many types of ground coffee appear that have different tastes. The quality of ground coffee can be determined from its taste, besides that the ash content and coffee essence are a measure to determine the quality of the ground coffee. Quality testing of ground coffee can be determined based on the Indonesian National Standard. Therefore, a study was conducted to determine the quality of ground coffee based on ash content and coffee extract using a method that refers to SNI 01-3542-2004. The test results on samples of ground coffee types KK, KR, KLD, KGK, KLK and RK are in accordance with the Indonesian National Standard, this means that the ground coffee has met the quality requirements set by the SNI 01-3542-2004 standard.
